Summer Squash Spice Oatmeal & Nut Cookies

Camille Rust (the Flagman's better half:) made these cookies for the "Cookies Around the World" Fundraiser at our local farmers market.( New Bern/Craven Co. Area Farmers Market) What a great idea to do with all the extra squash coming out of the garden now!!

Summer Squash Spice Oatmeal & Nut Cookies

1 cup flour
1 cup shredded summer squash (no need to peel, but should be drained
1 cup rolled oats
2/3 cup chopped nuts (any kind)
1/2 cup packed brown sugar plus 1 tablespoon sweetener
1/2 cup melted butter
1 teaspoon baking powder
1 teaspoon of cinnamon
1 teaspoon cloves, nutmeg or pumpkin pie spice mix
1/2 teaspoon sea salt
Preheat oven to 375 degrees Fahrenheit.
Combine all ingredients in a mixer and mix well. Spoon into your hands and form a ball, then gently flatted on the cookie sheet. Bake for 10 to 12 minutes util golden, turn onto a cooling rack.
Hint: you can freeze the grated squash and use it during the winter.
