Chicken, Chard & Penne...Tuesday market meal

Our New Bern Farmers Market has started opening on Tuesdays from 11am to 3pm. Today was our 2nd Tuesday there. I have been wanting to do more post about our vegetables and the meals we make with them but as always I start out with good intentions but seem to fall down on the job. So here goes again, my plan is to make a Tuesday evening meal (with the help of my wonderful husband) using what ever vegetables are left over at the market. Today we had some onions and chard.

1 bunch spring onions, chopped (5 in a bunch)
3/4 lb chard, chopped
4 boneless, skinless chicken thighs, cut bite size (on sale- made two packages of 4 for the freezer)
1/2 box Penna pasta
Salt & Pepper
Olive oil
2 TB butter
1/4  cup heavy whipping cream
Colby/Jack cheese


Box directions cook pasta. In frying pan brown S&P chicken in olive oil (remove from pan). In hot pan add onions and chard, cook down, add 1/4 cup water, lower heat and cook out most moisture. Taste to add more S&P.  Add butter, melt, add desired amount of cheese approx. 1/4 cup, add cream. Stir until mixed well. Add cooked pasta, mix well. Enjoy
