Tim’s Stuffed Rolley Polley Zucchini
1 round zucchini (two fist size)
Shredded cheese (your choice)
Par boil whole zucchini about 10 min. (Put zucchini in boiling water.) Take out and put in ice water, when cool slice off top and scoop out seeds and meat. You should leave enough meat so you have a zucchini bowl left.
Saute onion, garlic and what you scooped out of zucchini , take off heat mix with cheese and put back in zucchini add more cheese and bake at 350 about 7-10 minutes.
NOTE: You can use the larger round zucchini for this recipe, if the seeds are to large scoop out seeds first and discard then scoop some of the meat from the sides. This is a good recipe for leftover meat of any kind, just add meat at the end of saute, then add to zucchini shell and bake.
