Kermit Eggplant with Shrimp & Coconut milk.

1lb Shrimp
½ lb Kermit Eggplant Quartered
1 onion sliced
1 green pepper
1T Red Curry Paste
1cn coconut milk

Stir fry vegetables until cooked. Stir in paste (with the curry you can add more or less as you like it) & milk. Simmer 5 min. Add shrimp last so you do not over cook, when shrimp is pink it is done. Serve over cooked jasmine rice. For a lower carb meal don't use rice or substitute "Dream Fields Pasta".
