Recipe: Kermit Eggplant & Chicken

Kermit Eggplant & Chicken

1lb chicken breast cut in bite size pieces
½ lb Kermit Eggplant Quartered
1 onion sliced
1T Red Curry Paste
1cn coconut milk

Stir fry chicken & vegetables until cooked. Stir in paste (with the curry you can add more or less as you like it) & milk. Simmer 5 min. Serve over cooked jasmine rice.

Everybody here at 'R just loved this one! I now add more red curry paste, sliced mushrooms (browned) & even used left-over pork chops cut in bite size pieces. Yum!

The little green guys are the Kermit.

Two important ingredients. Tip look in the Mexican foods section for the coconut milk. Asian section for Red Curry Paste.
Brown Chicken
Brown onions, green peppers & eggplant.
Add eggplant, onions, peppers & chicken in pan, then add milk & curry paste to simmer then ladle over rice. These are all the picts. we were impatient to eat!!
