Recipe: Squash Fritters

Squash Fritters
4 cups grated raw squash
1/2 cup grated onion
1 1/2 cup shredded cheese
4 eggs
2 tbs parsley flakes
1 tsp paprika 
10 tbs flour

Grated squash and onion in a colander to get rid of extra moisture. Mix together first 6 ingredients, next add flour a few tbs at a time till you have a nice batter add some moisture if it is to thick. Drop spoonfuls in to hot cooking oil. Brown both sides.

4 Medium Yellow Squash
2 eggs
Flour
Salt & Pepper
Garlic Powder
Grate squash, add salt, pepper & garlic. Mix in two eggs, add flour by heaping spoonfulls till it is like pancake batter. Heat oil in frying pan, aprox. 1/4 inch in pan. Use a serving spoon to spoon batter in pan. Turn fritters when they start to brown around the edges. Cook till golden brown. EAT!   (To make more 1 egg for every 2 squash)

Grated Squash


Fritters should not be very thick 1/4 to 1/2. Pat them down a little when you drop them in the oil.
Beautiful golden brown!

This recipe comes from Joyce MacMullin. She and her husband come to the New Bern Farmers Market to sell their home grown vegetables, too.

2 cups grated raw squash
1/2 cup grated onion
1/2 tsp salt
6 tbs flour
3 tbs melted margarine
Mix well. Drop spoonfuls in to hot cooking oil. Brown on both sides.
